Ingredients


Makes: 4 servings
  • 2 Tbsp (30 ml)
  • 1 Tbsp (15 ml) olive oil
  • 18 oz (520 g) salmon fillets, cut into 1” (2.5 cm) cubes or strips
  • 2 C (500 ml) assorted vegetables, (asparagus, broccoli, red onion)
  • Stay-put Bamboo Skewers, pre-soaked in water to prevent scorching
  • Juice of one lime, optional
  • Sesame Crunch Topper, to taste

Preparation


 
  • Combine dry glaze and oil in a resealable bag or bowl, add salmon, and mix well to coat. Let marinate in fridge for at least 10 minutes and up to 24 hours, or freeze for up to 2 weeks.
  • Alternately thread salmon and vegetables snuggly onto bamboo skewers.
  • Preheat grill to medium-low, and lightly brush with oil to prevent sticking. Place skewers on grill and cook, 6–8 minutes, turning occasionally.
  • Place skewers onto a large platter. Using a 2-in-1 Citrus Press, squeeze lemon or lime overtop. Sprinkle with Sesame Crunch Topper and serve with extra lemon wedges, if desired.
